WThis is an easy interpretation of a cocktail found on the seasonal cocktail list. This is a party-sized prepared mix that's packed full of flavours associated with holiday season, making it ideal for a holiday party. Save the extra cordial for brunch beverages, sweets, or to mix another batch of bikinis.
The Bikini Cocktail
Yields 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Place the listed ingredients in a pot, bring to a gentle boil, mixing so the sugar melts. Next, turn off the burner allowing it to cool down fully. Transfer to a clean bottle, seal keeping it in the refrigerator, where it will keep for up to four weeks.
For the Premix: Pour all the spirits and syrup into one big jug, let it rest for one hour, then strain best through a fine cloth, to ensure it's completely strained.
For serving: Measure 85ml from the cocktail base into a mixing glass containing ice, and agitate carefully for one minute to cool it down. Filter into an cold coupe glass or similar, garnish with the cranberries and finish using a brief mist of the essential oil above the glass.
